Small apple muffins

Ingredients

  • 2 cups of raw, peeled apples (300g)

  • 1 1/2 cups of all-purpose flour (210g)

  • 2 eggs

  • 2 tablespoons of honey (48g)

  • 2 tablespoons of olive oil (14g)

  • 1 tablespoon of water

  • 1 tablespoon of vanilla extract

  • 1 teaspoon of baking powder

  • 2 teaspoons of cinnamon

Preparation

  • Preheat the oven to 180°C. Peel and cut the apples into small pieces.
  • Beat the eggs in a bowl and add the honey, olive oil, and water; mix well. Then add the vanilla extract.
  • In another bowl, combine the dry ingredients (flour, baking powder, and cinnamon), mix, and then add to the previous mixture.
  • Add the apple pieces and mix.
  • Arrange muffin tins on a baking sheet and fill them ¾ full with the mixture.
  • Bake for approximately 20 minutes, or until golden brown.
