Small apple muffins

Ingredients
2 cups of raw, peeled apples (300g)
1 1/2 cups of all-purpose flour (210g)
2 eggs
2 tablespoons of honey (48g)
2 tablespoons of olive oil (14g)
1 tablespoon of water
1 tablespoon of vanilla extract
1 teaspoon of baking powder
2 teaspoons of cinnamon
Preparation
- Preheat the oven to 180°C. Peel and cut the apples into small pieces.
- Beat the eggs in a bowl and add the honey, olive oil, and water; mix well. Then add the vanilla extract.
- In another bowl, combine the dry ingredients (flour, baking powder, and cinnamon), mix, and then add to the previous mixture.
- Add the apple pieces and mix.
- Arrange muffin tins on a baking sheet and fill them ¾ full with the mixture.
- Bake for approximately 20 minutes, or until golden brown.
