Red Fruit Mousse

Suitable for: Stage IV or pre-dialysis patients, dialysis patients, and diabetics

Ingredients

  • 40g Wild Berries (4 tablespoons)

  • 2g Powdered Sweetener

  • 1 Sheet of Unflavored Gelatin

  • ¼ Low-Fat Wild Berry Yogurt

  • 1 Egg White

Preparation

  • Crush the berries with the yogurt.
  • Soak the gelatin sheet and microwave for a few seconds. Remove and stir into the previous mixture.
  • Whip the egg whites with the sweetener until stiff.
  • Pour the initial mixture (fruit, yogurt, and gelatin sheet) over the egg whites and fold everything together thoroughly (until smooth).
  • Refrigerate for at least 1 hour.
