Red Fruit Mousse
Suitable for: Stage IV or pre-dialysis patients, dialysis patients, and diabetics
Ingredients
40g Wild Berries (4 tablespoons)
2g Powdered Sweetener
1 Sheet of Unflavored Gelatin
¼ Low-Fat Wild Berry Yogurt
1 Egg White
Preparation
- Crush the berries with the yogurt.
- Soak the gelatin sheet and microwave for a few seconds. Remove and stir into the previous mixture.
- Whip the egg whites with the sweetener until stiff.
- Pour the initial mixture (fruit, yogurt, and gelatin sheet) over the egg whites and fold everything together thoroughly (until smooth).
- Refrigerate for at least 1 hour.
