Healthy oatmeal and apple cake

Ingredients

  • 3 medium apples, peeled and cored (450 grams)

  • Zest and juice of 1 lemon

  • 1 1/2 teaspoons ground cinnamon

  • 1/2 cup cornstarch (55g)

  • 1/3 cup oat flour (40g)

  • 1/2 cup coconut sugar (100g)

  • 1 teaspoon baking powder (7.5g)

  • 2 eggs (approx. 100g)

  • 1/4 cup melted coconut oil (50g)

Preparation

  • Preheat the oven to 180°C. Place the previously sliced apples in a bowl, cover with cinnamon, lemon juice, and zest. Let it rest for a few hours.
  • Grease a springform pan with parchment paper, sprinkle with flour, and alternately spread the apples and cinnamon powder over it. Set aside.
  • In a bowl, combine the cornstarch, oat flour, baking powder, and cinnamon. Separately, whisk together the eggs, sugar, and coconut oil.
  • In the pan, begin assembling the cake: a layer of apple slices and another with the dry ingredient mixture. Repeat the process until the pan is full. Then, drizzle with the wet ingredient mixture. Sprinkle with oat flakes and bake for 30 to 40 minutes, or until golden brown. Let cool and unmold.
