Healthy Vanilla Cake

Ingredients

  • 3 eggs

  • 1 plain yogurt

  • 1 1/2 cups sugar (use the yogurt cup as a measure)

  • 1 cup cornstarch (use the yogurt cup as a measure)

  • 1 cup olive oil (use the yogurt cup as a measure)

  • 1 teaspoon vanilla extract

  • Butter to taste for greasing

Preparation

  • Beat the egg whites until stiff peaks form and set aside.
  • Beat the egg yolks with the sugar and yogurt. Add the cup of olive oil and beat again until smooth. Finally, fold in the cornstarch and vanilla extract.
  • Add 1/3 of the beaten egg whites and beat vigorously. Gently fold in the remaining beaten egg whites.
  • Pour the batter into a greased and floured pan.
  • Bake in a preheated oven at 350°F (180°C) for 30 to 35 minutes.
  • Unmold the cake once it has cooled
