Oatmeal and Apple Pancakes

Suitable for: Stage IV or pre-dialysis patients, dialysis patients, and diabetics

Ingredients

  • 1/2 cup oatmeal (50g)

  • 2 tablespoons skim milk

  • 1 apple

  • 1 egg

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

Preparation

  • Wash the apple well and grate it, without peeling it. Set aside.
  • Add the egg, milk, and cinnamon and mix it into the previous mixture (apple).
  • Finally, add the oats to the previous mixture and blend with a hand blender.
  • Place a nonstick skillet over the heat with a drizzle of olive oil and let it heat up.
  • Place the dough in the skillet and cook for about 1 minute on one side. Then, using a spatula, flip it over and cook for another minute on the other side.
