Healthy Vanilla Cake
Suitable for: Stage IV or pre-dialysis patients + Dialysis patients

Recommended serving size: 1 slice
Ingredients
3 eggs
1 plain yogurt
1 1/2 cups sugar (use the yogurt cup as a measure)
1 cup cornstarch (use the yogurt cup as a measure)
1 cup olive oil (use the yogurt cup as a measure)
1 teaspoon vanilla extract
Butter to taste for greasing
Preparation
- Beat the egg whites until stiff peaks form and set aside.
- Beat the egg yolks with the sugar and yogurt. Add the cup of olive oil and beat again until smooth. Finally, fold in the cornstarch and vanilla extract.
- Add 1/3 of the beaten egg whites and beat vigorously. Gently fold in the remaining beaten egg whites.
- Pour the batter into a greased and floured pan.
- Bake in a preheated oven at 350°F (180°C) for 30 to 35 minutes.
- Unmold the cake once it has cooled
