Pumpkin Cream with Fresh Mint

Ingredients

  • 1 pumpkin, cubed

  • 1 red onion, chopped

  • 3 garlic cloves

  • 1/3 leek

  • Olive oil to taste

  • 1/3 bunch mint

  • 2 eggs

  • Sea salt to taste

  • 2/3 bag croutons (about 100g) (optional)

Preparation

  • Start by dicing the onion, garlic, and leek into small cubes, as well as the pumpkin. Soak them in water to remove some of the most harmful minerals (potassium).
  • Boil the eggs and set aside.
  • Add the onion, garlic, and leek to a saucepan with the olive oil. Let them sweat slightly. Then add the pumpkin, cover with water, and cook.
  • Blend, add a sprig of mint, and simmer for 10 minutes, remove, and garnish with the chopped egg and croutons.
  • Note: mint should be used fresh and added only after turning off the stove, then removed after 10 minutes.
