Pumpkin Cream with Fresh Mint

Ingredients
1 pumpkin, cubed
1 red onion, chopped
3 garlic cloves
1/3 leek
Olive oil to taste
1/3 bunch mint
2 eggs
Sea salt to taste
2/3 bag croutons (about 100g) (optional)
Preparation
- Start by dicing the onion, garlic, and leek into small cubes, as well as the pumpkin. Soak them in water to remove some of the most harmful minerals (potassium).
- Boil the eggs and set aside.
- Add the onion, garlic, and leek to a saucepan with the olive oil. Let them sweat slightly. Then add the pumpkin, cover with water, and cook.
- Blend, add a sprig of mint, and simmer for 10 minutes, remove, and garnish with the chopped egg and croutons.
- Note: mint should be used fresh and added only after turning off the stove, then removed after 10 minutes.
